Ingredients

1 lb Russet potatoes (about 3 medium)*

  • 1 3/4 cups refried beans, homemade or store bought**
  • 8 oz bacon, cooked and chopped and 2 1/2 Tbsp drippings reserved
  • 6 large eggs
  • 1/3 cup milk
  • Salt and freshly ground black pepper
  • 1 1/4 cups shredded cheddar or Monterey Jack cheese (I use a blend of both)
  • Fire Roasted Tomato Salsa, recipe follows
  • 8 taco size flour tortillas, warmed

Short Bio
Hi babes! I’m Madison and I run a life and style blog called The Salty Vogue. I’m a fifth generation Florida native who lives with my high school sweetheart and our two fur babies. I’m a twenty something entrepreneur who loves working out and soaking up some good Florida sun- but with a big floppy hat and sunscreen of course!

What inspired you to start your blog? How long have you been blogging?
Well, I guess you can say my love for fashion started when I was four years old. I would go in my grandma’s closet, steal her Ferragamo’s, then shower myself in her Chanel perfume. Fast forward to high school, I was an avid Googler. I wanted to learn EVERYTHING from fashion to wellness and everything in between. So, I put the two together and BAM…The Salty Vogue was born. I actually started blogging a few years ago, but I never had the balls to make it public. Three months ago, I pulled the trigger and I’m so glad I finally did.

Describe your style? Where do you find your style inspiration?
My style really depends on my location and the weather! If I’m going to the Bahamas, I’ll dress boho chic. If it’s raining out and I haven’t had my morning coffee, I’ll go all Parisian and wear black head to toe. When I’m not wearing gym clothes, my favorite style is minimal. Jeans and pumps are my go to. I usually keep an eye out for what’s trending on the catwalk or I’ll just visit Lilac and Lilies for a little styling time!

What is a timeless fashion piece you can’t live without?
I would say my red pumps are a timeless fashion piece. I believe every woman should own a pair of spicy red pumps! When I walk into a room wearing them, I instantly feel confident and beautiful. Red screams girl boss. After all, “Give a girl the right shoes, and she can conquer the world.”

What are some of your favorite Summer 2016 Trends?
I actually have a whole list written down of spring trends I’m diggin’. Only so I can snatch them up. Anyways, this is what my list is looking like so far:
+ Round beach towels (boho chic theme print, obviously)
+ Denim (a girl can never have to much denim)
+ Slip dresses
+ Flat Mules
+ Chokers
+ Bomber jackets
I want it all and I want it delivered!

One piece of advice you would give to any start up bloggers?
I think there’s a few points that every new blogger should know when they first start out. When I first started my blog, I didn’t know what the hell I was doing, and I wish I had someone to help me and say hey, instead of doing that, you should do this. SO, for new bloggers:
+ Stand out and be unique. I think it’s important to share valuable information that will benefit the reader. So none of that, “you should be wearing plaid because fall fashion”. At the end of the day, you are writing FOR the reader.
+ Be yourself. Let your personality shine through the computer screen.
+ Quality over quantity. It’s better to have a few really bomb ass posts rather than a lot of crappy posts. Make sense?
+ Be consistent with your posts.
+ Lastly, take pretty pictures! Presentation is important.

Favorite place to work on your blog? Creative Space?
My friends make fun of me because I bring my laptop and camera everywhere I go! You never know when a blog post is going to pop up in your head! Most of my inspirations behind my blog posts, are just from everyday life. If you read my blog, you know I like to get down and real. It’s weird, usually I’m running on the treadmill or taking a shower, and I’m like “Oh my gosh, I have to tell my readers this!” When I want to feel like a normal working person, I’ll blog in my little home office. But I only blog, if the vibes are just right. Candles, diffuser, lounge music, and a cup of java!

Skinny Fried Egg and Avocado Toast

Ingredients
  • 2 eggs (fried sunny side up)
  • 2 slices of bread (toasted)
  • 1 small avocado
  • 1 teaspoon lime juice
  • sea salt + black pepper
  • parsley (optional for topping)

 

Instructions
  1. Prepare toast and fried eggs to personal preference.
  2. Peel and mash avocado with the lime juice, salt and pepper.
  3. Spread avocado evenly on each slice of toast then top each with a fried eggs and additional seasonings you prefer. Serve immediately.

Blueberry Banana Greek Yogurt Pancakes by Running With Spoons

Author: Amanda @ Running with Spoons Yields: 1 serving, about 6­/7 pancakes

Ingredients

1/4 cup (60 g) plain Greek yogurt

1/2 medium, ripe banana (50 g or 1/4 cup [60 ml] mashed)

1/2 cup (40 g) rolled oats*

2 large egg whites OR 1 large egg

1­/2 Tbsp (15­30 ml) unsweetened almond milk*

* 1/2 tsp baking powder

1/2 tsp vanilla extract

1/4 cup (35 g) blueberries, fresh or frozen

 

Instructions

1. Preheat a skillet over medium heat and coat it with cooking spray or oil. You want to make sure that it’s very hot before you start cooking your pancakes. 2. Add all the ingredients except for blueberries to a blender in the order listed and blend on high until the oats are fully broken down and the batter is smooth and frothy, about 1­2 minutes. Fold in the blueberries by hand and allow batter to sit for a few minutes so that it thickens up. 3. Pour batter straight from blender onto skillet until desired size of pancakes is reached and cook until the edges have set and bubbles begin to form on the tops of the pancakes, about 3 minutes. Using a spatula, flip and cook for another 2 minutes. Repeat until all the batter is gone, making sure to coat your skillet again with oil between each batch. Top with desired toppings and enjoy!

 

Notes
* make sure to use certified gluten-free oats if you need these to be gluten-free.
** start with 1 Tbsp (15 ml) of almond milk and only add a second if you feel the batter is too thick.

Ingredients
  • ¼ cup cooked quinoa
  • 2 tablespoos chia seeds
  • 2 tablespoons hemp hearts
  • ¼ teaspoon vanilla powder
  • Dash of stevia (or use 2 tablespoons maple syrup)
  • Pinch of cinnamon
  • ¾ cup cashew milk (or milk of choice)

Instructions

1. Add all ingredients to a jar and stir together. Tighten lid and place chia pudding in the fridge to set, about 2 hours (or more).

2. Remove and top with desired toppings. Enjoy!
